Hello Fabian,

In my experience, you can only postpone the OS update or schedule time windows for OS updates (Profiles > Configurations > System Update Policy). But I would try to disable OS Update using OEM Config if your device supports it.

It really depends on what manufacturer you're dealing with. For example you would have complete control over the OS updates with Zebra or Honeywell Android devices. Consumer grade manufacturers however tend to push things OTA and provide you with limited control.

Regarding your inquiry, It really depends on what manufacturer you are using

For some device brands and models running Android Enterprise device agent, one simple trick is to set the shortest possible 1-minute time window every day for OS update.  The time window is so short that no realistic OS update (not even the image download) can actually be started/completed.  In addition, the1-minute time window can also be set in odd time after midnight or in time slot when devices are highly likely to be powered off.  This further reduces the possibility that devices firmware are updated.

However, it is hard to rule out 100% the possibility  that some "special" events on particular device brand/model will create loophole(s) that can cause firmware update to be initiated by some other portion of device firmware that is not handling the normal windowed firmware update control.
