Add GBoard (if this is the used keyboard on your devices) to your managed playstore, goto manage settings and disable the clipboard.

I tried to disable the clipboard and it worked, it will continue to copy/paste when we hold the text it still appears, how do I disable copy/paste on enterprise Android?
What manufacturer? Some manufacturers offer OEM specific methods of disabling clipboard access.
Just to add, if you use Samsung device you can disable it in the knox service plugin but not sure if this covers long press as well.

I don't know why you marked as solution a post talking about GBoard, which doesn't seem to have anything to do with your question about copy and paste.
Copy and paste related feature control has been supported for some OEM brand devices such as those from Samsung for many years. Unfortunately, the feature recently only works for ELM (Android Classics for Samsung), but not for Android-Enterprise agent since Android 11. I don't think there is any solution for recent AE devices.
