I was wondering if it would be possible for a third party app to read any information from MobiControl? What would be most useful to me would be the name of the device, or the profile which has been applied to the device (if any).
Is anything like this remotely possible?

You could likely get what you're looking for by utilizing the MobiControl APIs. That would be an interaction between the third party app and the MobiControl server however, and not the MobiControl agent.
You can retrieve the SQLite DB of the MC-Agent via Script (use the search for this)
For SerialNum you can use the following wildcard in renaming a txt file via script %SERIALNUM%
