You can do it like Marcus told you already, which mean you additional need to blacklist all default apps you don't want to have on the device "manually" via profile "application run control". This could the only way to do it.
But i want to show you another possibility but I'm relatively sure you may need then to set it manually as the default launcher. Instead of changing the DPC for enrollment (which is only possible if you use Zero-Touch and not when using afw#mobicontrol), you can run the script (this can be put into a package or task profile to run once as well):

We run it with ture and let all Apps enablet.
The Devices CK65 / CT40 (Same Firmware) we are running with Kisok Mode and i have set different restrictions over MobiControl to Handle the Applications.
