There is no need to use any MobiControl script to configure any Zoom parameter.
Instead, Zoom Android app supports standard AppConfig framework, which means that if the app is deployed to an Android Enterprise device as a managed app, various Zoom parameters can be configured via the Managed Configuration tab of the added relevant Zoom app in the App Policy/App-Catalog-Rule of the MobiControl web-console.

Perhaps I have not explained myself well.
I have multiple devices that use a private app.
This application requires that, for the screen configuration, the zoom mode is set to 100%
I attach an image so that it is understood.
I need a script to make all remote (Samsung) tablets be configured that way.
End user does not have access to system settings (only mode user, no admin)

If your company outsouces someone to develop the private app, ask them to add feature to support AppConfig framework similar to what Zoom or other enterprise apps do. With your required zoom-percentage parameter added, you can then configure it remotely with MobiControl or any other MDM solution supporting the standard.
However, on Samsung devices, the following used to work for many device models using legacy Samsung ELM Android+ device agent:
writesecuresetting -sys font_scale 1.0
where the final argument value of 1.0 stands for normal font size. This may not be exactly the "zoom factor" parameter in device Settings that you are interested in, but is already the AE-compatible parameter that has the highest chance of matching what you need, as far as I know.

It is difficult to modify the .apk (at least, in the near future: P)
Changing the Font by script is interesting, but it doesn't solve the problem for me.
