Can you adjust the default list of Device Actions? I like having quick accessibility to some actions like Remote Control and Send Script but would want to hide Delete and Unenroll and some of the other options. Can you adjust this list of Actions at all?

MobiControl provides you with the ability to enable and disable the permissions of what users are able to do with devices in the Security Tab, including, deleting device, sending scripts and remotely connecting to the devices directly. However this being the case the ability, to "hide" or "mask" the buttons is not currently a feature but I can imagine the use case that would make this . Please submit a support ticket to support@soti.net and have a feature request completed with an example of your use case so our developers can determine the plausibility of adding it into the software.
