I am NOT a SOTI expert, but I might be able to help you. I am also not on the same version as you.

You want to edit/create a profile and in that profile under configurations, you need to go to settings manager and basically turn off the radio buttons under WiFi 

Create / edit a profile
Go:
Click the profile>click pencil to edit>Configurations tab>Settings Manager
Mine looks like this

Here you can really "lock down" the device.

Even I'm way far from being good at iOS but afaik and also all my searches in the web suggest that there's no such possibility (in general) to hide the Wifi passwords on iOS devices.

You may block the relevant app by application run control but i guess this would affect maybe entire wifi connection (or even more) so i think that this would be a very risky (maybe breaking the device) and bad way to go.
