Is there other variables that can be passed though the KME profile using the Custom JSON Data field that is being used for the enrollment ID to the MobiControl Agent?
It would be helpful in my provisioning process to register a WIFI network or set timezones and other things supported by the QR codes or INI file.

In general, profiles can be applied to folders as well as devices and therefore the configuration can definitely be assigned to the folders/devices during the enrollment process while provisioning your devices.
Are you experiencing challenges getting the devices to connect to the WIFI ? Is that why you are looking to have other variables such as timezone passed to the devices on enrollment with the customized JSON format?
I have not used this method for enrollment but I can inquire for you regarding this as the KME method seems designed to allow you to include the enrollment ID as part of the provisioning and therefore be zero touch.
