You can try using the macro
%ENROLLEDUSER_EMAIL%
in your HTML/CSS codes for the lockdown menu.

Good idea but the %data% is not displayed "dynamically"...maybe you can provide an effective way to "refresh" the KIOSK with the "updated" %data%...the only way (at least in my case was to "re-deploy" the profile.
