Is there a way to add a shared folder to the tablet from a shared drive mapped to the company's server? Possibly in lockdown mode? I haven't found a way to successfully do this. One drive would probably work as a work around???

Are you sure the shared drive on your company server has successfully been mounted on the device file system? Have you successfully use any file manager app on the device to access the shared drive when Mobicontrol lockdown mode is off? (Note: Your tests should also verify the read and write permissions of different folders/files in the mounted drive.)
If so, you then have to find the full file path used to reference the shared drive folder. Only when such information is available can you start considering how to add that in your MobiControl lockdown mode. Please note that the path may be different for different device brands/models/firmware-versions, and the kiosk profile(s) may need to be customized to cater for such difference(s).
The optimum way of sharing the data would be to setup an ERG and push them using SotiHub.
Since you mentioned OneDrive, if you have O365 licensing for the users, you could publish the documents on a SharePoint site, then use Soti Hub to connect to the SharePoint.
