How do you plan on managing the devices, Android Enterprise Work Profile (BYOD), Android Enterprise Work Managed (COSU), or Android+ (DA)? The management use case and intended purpose of the devices will dictate what agent and enrollment method is recommended.

As matt stated, the agent used will depend on how you want to manage your device. If simply enrolling via Android + you can navigate to https://docs.soti.net/mobicontrolagentdownloads, Select "Android - OEM Specific Agent and Plugins", Change Manufacturer to "Bullitt", Model to "Bullitt (B15Q, S30, S31, S40, S41, S50, S60, S61), Agent Version to "v13.7.0". This agent should be target all three devices.

While CAT S31 & CAT S41 are listed as supporting Android Enterprise at
https://androidenterprisepartners.withgoogle.com/devices/
the three models you specified are not on the list. The information on the web site may not be updated, so you have to test if the three models in their latest firmware support Android Enterprise. If not, you have no option and has to use Android Plus device agent as specified by HNMOD.
If the models support Android Enterprise device agent, you do have options and the right choice depends on your use case. My general selection principles regarding any brand/device are as follows:
1. Use Android Enterprise Work-Profile mode if BYOD (i.e. work space container sitting side by side with the personal space for device owned by the device end-user)
2. If the use case required third-party apps (and their updates) from Google Play store (i.e. there is no official apk available to create .pcg package for app deployment) then, use Android Enterprise Managed-Device/Device-Owner mode.
3. If advanced bulk enrollment (e.g. QR-code, NFC, etc.) and/or device-theft deterrence mechanisms such as Zero-Touch-Enrollment (ZTE) is needed, use Android Enterprise Managed-Device/Device-Owner mode.
4. Apart from (2) and (3) above, if ALL other MDM profiles/rules/advanced-settings policies required in one's use case are supported in both Android+ and Android Enterprise platform, then choose Android Enterprise. If some required features is only support in Android Plus and not in Android Enterprise, then choose Android Plus.
