I've wanted this for some time but I don't think its something we're going to be able to see in the MobiControl logs. When OEMConfig is introduced there will be the concept of a feedback backchannel where the results of the configurations that are applied are reported back to the EMM. That will give you the feedback that you are looking for, but likely won't be seen under the mxconfig xml based delivery. 

It is weird thou since we can see the XML output in mobicontrol logs located on the device (verbose logging) but not in the web console log tab.

Should not be so difficult to extract this into MobiControl web console.

And actually, we can also see if the command is accepted or not. For me it just seems like SOTI has been a bit lazy :)

Very true, I feel like they could report up the results from the device level logs. At this point I'm not sure if they're going to put much additional effort into the EMMTK based MX application with OEMConfig support right around the corner for Zebra MX configurations.
