As far as I know, there is no so-callled DEFAULT orientation of any remote view/control session in MobiControl.  The orientation of a any remote session when it start depends on the actual orientation of the target device when the session starts.

If you find that your remote sessions are always portrait, maybe you should check whether the devices concerned has been configured to portrait mode with Settings or other third-party apps running on the devices.
