Is there a way to schedule an appointment for lockdown on / off?
ex: lockdown when assigned to devices that operate only on certain days of the month, or during the week.
I have never seen such a category in lockdown configuration, but I hope there is a solution to this problem, hope someone has the same idea as mine.

i'm not expert but lockdown is locate inside a profile.
You just need to plan to assign and remove it ...for me :)
These options are locate in tab options on the profile.
also, can you tell us with which device do you work (enroll android + / android entreprise) and the version of mobicontrol you use ?

The straightforward configuration options on the web-console suggested by Christophe should work perfectly if your devices are always on-line. If a device is offline during the scheduled kiosk on/off transition time, it won't work until the device gets back online again.
In case such offline use-case cannot be tolerated, more advanced configuration procedures may still be used to achieve desirable result, possibly with some limitations depending on the kiosk and schedule complexities.
