You can install your own camera apps if you have the apk,  or have any camera app selected and downloaded from managed Google Play store.  Alternatively, you can re-enable the default camera app(s) on your device bundled and available before you factory reset the device to AE-Managed-Device mode.   Just use

   enable_system_app   Your_App_Bundle_ID

However, I don't know if you can hide it again with script command if you don't want it, unless you factory reset the device again  In the case you want to hide a bundled app unhidden with "enable_system_app", one possible option is proababy to leave it out of the application run control whitelist in v14.x Android Enterprise profile payload.
