I don't think there's such possibility.

The only way you could get this done i currently have in mind is:
1. Disable outgoing NFC : Feature Control Profile (check if ingoing is possible for files, maybe you need to disable NFC via OEM config app of the vendor of your devices used if available)
2. Blocking the BT settings for the user (maybe leave possibility to turn it on/off) : Feature Control Profile
3. In admin mode on the device connect the BT printer once

With this done the user can use the BT printer (always the same) and can't share files etc. via BT/NFC as (outgoing) NFC is disabled but use the printer as the printer is already known by the device.

As far as I know, no device platform owners (Google, Apple or Microsoft) define any MDM API that supports what you need.

However,  specific device brand (e.g. Samsung) include extra OEM specific MDM API  (accessible with OEMCOnfig)  to control whitelist of USB/bluetooth device classes allowed, which MIGHT partially and indirectly support what you need, depending very much on the set of device classes allowed and not allowed in your targeted devices if they are from Samsung.
