Are your devices DEP devices in supervision mode?  

We have a supervision mode but with normal enrollment, without DEP

All MDM profiles and Soti certificates of your device cannot be removed by device end-user when it is a properly configured DEP supervised device.

and for prevent reset the Settings of an IPAD group ??

Apple currently has not defined any way to stop an end user from resettng an iOS device.

However, when your device is a DEP supervised device,  resetting it will result in it automatically re-enrolled back to your MDM server and all the previously configured profiles automatically pushed back onto the device.
